About the Guest Chef

Carmen Hibbert

Carmen Hibbert, Manager of Food & Beverage and Guest Services at Bluefields Bay Villas, has been offering guests her trademark tropical treats and memorable meals since 1991. She is the creator of Bluefields Bay Villas’ renowned Jamaican Fusion Cuisine, which is a style blending Jamaican ingredients with international methods of preparation and cooking.

Carmen was born in the Jamaican parish of Westmoreland and studied Food, Nutrition and Hospitality Management. Over the course of her career, she has trained with several Washington DC-based Belgian and French chefs. Carmen attributes her many achievements to her grandmother, Estella Hibbert, who nurtured her love of cooking and encouraged her to pursue her dreams.

Bluefields Bay Villas is a family-owned resort — rated 5-star by TripAdvisor —that has grown to include six waterfront villas, each with private pool and full staff. Established in 1982, its Washington DC owners were married in Bluefields in 1983 and have two Jamaican-born children. Bluefields Bay is a Protected Fish Sanctuary set on Jamaica’s leeward south coast that is without commercialism and is the best part of the island for deep-sea fishing. Over the last 23 years, Carmen has been instrumental in development of this tourism business and is now truly recognized as the “face” of Bluefields Bay Villas!!
